They don't pick their own callsign. In the US; they are given at naming ceremonies or "namings." They usually based on how you screwed somethings up. Once a pilot flies with a call sign in combat, they get to keep it for their career.

Mostly, or I should said always. Air Unit squadron needs a callsign, despite you heard the names funny and strange. They're useful enough to identify the individual who flies his/her plane.
