I am having a hard time understanding grey scale and composition. In this piece, i used golden ratio to help me out, but i still feel that something is wrong. Also, i think i could have used more colors. Please, let me know what you think!

I think you should make the main character (mid ground) brighter. In value grouping there are fore, mid, and back. If your mid ground is lighter then your fore and background should be darker, and if your mid ground is darker then your fore and mid ground should be lighter.
so the focal point is on the midground. because I was a little distracted by your foreground which was as bright as the midground. I'm taking the illustration from earlier, the value grouping in this illustration is correct (fore) light (mid) darker (BG) lighter
If you use grayscale, you will definitely do a gradient map process. I have a little suggestion, if there are some colors that you feel are lacking, maybe you can use a color layer.
If the value is lacking, just lasso to the lacking part, then go to the edit menu, tonal correction, then go to brightness/contrast, just edit whether you want it to be brighter or darker. But if your color is a bit too thick, just go to hue/saturation/luminosity. So if you use the grayscale technique, my suggestion is that you also have to pay attention to the layer mode and others too
