So far the anatomy and pose looks fine! :D
Dont know how long Eevees ears are but they seem a bit TOO long :o

I imagine the flat colors could be pretty straight forward, practically color picked from the official reference :D
If you want to stray more from the original with a creative approach maybe mess around with the hue filters, that would help keep the contrast and values the same but give a different colorful look

Look at the references
You can see they use a lot of textures, a limited color palette, flat colors with minimal shading, shapes scattered around :D

Theres also often a “frame” of sorts which you can see on all the references you sent
