They are unlocked by talking to their respective NPCs. You can max out all of them, so there is no need to be picky.
There is currently an event going on (we don't know for how long) which allows you to complete a quest for each skill every week, which gives a lot of xp

It used to run on Linux without having to do anything special until they put out a update Mid-Oct that introduced a Anti-Cheat that basically makes your game crash anywhere between 10-30 mins
I have no Linux experience myself but I use a Steam Deck and I had to get GE Proton to be able to make it work. Idk if this helps you
