There's also the fact that the debuff from thorns is just not that good
It needs to ramp up, so you don't get the full value out of the duration, and it's also very annoying to set up
When you really need res/def reduction, you usually can't afford to drop 2/3 units just to enable that
Ifrit does res shred better, shamare does def shred better

Also debuffing res is often done for ceobe, and ceobe does not want you to shred def
