you probably have aim assist pretty strong so you just target center mass
with controllers it's different... when you target lock on someone you just move the stick up a little and hit their head
on mouse and keyboard you do your best to track the head most of the time directly
your best settings will honestly be up to you.. but the more you play the more muscle memory you'll build up and easier the headshots will be 😄
