I think those outriders missions might be the easiest. You can sit on the wagon toniced up killing folk while an npc is driving.

*rich pickings.. those are easy too if you're good at stealth, true
Not fully sure but i think all of the "a new source of employment" missions are auto-aim on console, so they're much easier than the other categories.

There's one in colter you can do stealth as well, but there they've always spotted me.

i'll have to give the one in colter a try later... i tend to have Focus Fire on, but these stealth missions are a lot easier with Paint it Black
