So, this may or may not be the right place for this? It's a question regarding people's tactics and builds...and maybe some new players can scroll through and get some ideas. Maybe I can.

Here is what I do/use for random PvP
When it comes to just general "free roam waiting for someone to sneak attack me", it's
Never Without One, Sharpshooter, Iron Lung. Paint it Black Deadeye.
Carcano, Repeater (any) and Pistols (Mauser or Semi)

Note: Typically, I won't carry a shotgun unless I wanna spam incins'...and you'll probably agree that's what 99% of people use them for. But it could be worth it in Saint Denis.

This is my go-to all purpose setup. I pick IL over FMO because most of the time, taking repeated body shots isn't part of what's going on in random PvP...I'm dying from headshots up close, or getting 2-3 tapped by snipers. The two cards are functionally the same in that area, and I even get a little bonus stamina regen from IL. Helps with diving.
FMO is better for PvE, and fighting multiple newer players who do nothing but body shot me. Winning Streak is good for countering FMO, and not much else. Again stacking damage isn't typically what's going on...in random PvP fights, I either headshot them or 2-3 tap them with a sniper.
Also, pistols are effective alot further out than people seem to think. I catch alot of people off guard at medium-ish range while they're trying to fire they're Repeater at me, I just go Brrrrrr.

Note: tonics and gold cores can drastically alter how a sniper battle plays out. If you're using this build and someone takes 4+ hits from a CLEAN carcano with Express rounds...yeah, they're chugging tonics like a mofo.
Also, everything I just said is assuming two people are using PiB.
Which is what I typically run into...but that's me. And this is my general purpose build, not a specific counter to slippery or SnS. I'd elaborate but this is already too long.

Slip player here. Running Winning, Sharpshooter w/ Peak or Iron. Carcano, Navies or Sawed offs, and a shotgun of some sort or a bow.

I'm a PvE player.
I use Slow and Steady, Never Without One, Winning Streak and Gunslinger's Choice.
I use a Lancaster Repeater, Double-Action Revolvers and a Pump-Action Shotgun.

This build is built with the idea of all PvE missions in mind with 5 star Owlhoot Family being the guinea pig.
The Lancaster is a well balanced repeater that I can use for pretty much any situation, the Pump-Action is my go-to for close quarters horseback encounters, and the Double-Actions serve as my "SMGs".
Long story short, I either have 12 rapid headshots at my disposal or I can just go "RANDOM BULLSH!T GO!" and hip fire them like mad.

My ability cards are probably the least complete part of my build as my opinion keeps changing.
Never Without One gives me extra damage resist, which is pretty much essential in 5 star bounties (also Owlhoot enemies can headshot, it's rare but it happens, so it also keeps my from getting one shot).
Gunslinger's Choice is essential for Double-Action, and enables me to be very accurate with my sidearms.
Winning Streak is my newest addition, it's there so that panic hip fire isn't a complete waste of ammo in 5 star bounties (I originally ran Fool Me Once for extra resistance).
Slow and Steady is very useful for staying alive and even slowing you down to steady your aim, I also find it calms me and forces me to focus if I panic.

slow and steady already takes care of headshots, using nwo for that means you're going to lose your hat at one point, which will make you take more damage

if you can afford to do that while getting shot you probably dont need the card at all

for general free roam pib with sm, fmo and il, i swap to sns or qai for harder things

headshots arent one hit kills in pve either, if you're having trouble with dead eye id drop it even for eye for an eye if you consistently headshot

So there, in PvE, it's dmg resist, and in freeroam, it's an anti grief tool

Now I believe you have better things to do in your life than be insufferable to someone who plays to have fun instead of playing everything to the perfect efficiency to the point that RDR is the only thing said person can focus on

owlhoot is a legendary bounty, i dont get why you mention pvp there where you cant run into any other players other than your own posse

unless you mean outside of it in which case, there's defensive mode and a lot of other options, such as having a pvp build for actual pvp

the main drawback of that card is you taking more damage when your hat is off, not worth the trade off in pve for the most part, if you're using it for the damage reduction there are other ways, such as using a headband, which will count for the damage reduction but not the headshot part on the card

I'm a sharpshooter so I run Rolling Block. Secondaries being LeMats for their shotgun close range and high capacity. They are nearly as accurate as navy's too. I run Slow and Steady, Sharpshooter, Gunslinger 's choice, and Live for the Fight.

With GC the LeMats are just as accurate as navies and the shotgun is great. And Sharpshooter is a given for people who use snipers. I like the Rolling Block more than Carcano because it does better damage, and to me it just feels more skilled to plug someone's skull than to pepper them with bullets.

+1 for Remington. Also, as far as I know this version of Carcano is based on a model from a different historical period
