A single shot to the head with the correct weapon (rifle in this case) will keep it at the same quality, any other damage, even you just accidentally kicking it, will make it drop

You can use any ammo (besides explosive obviously) if you just shoot them in the head

Squirrels yeah. Turkey no. When you aim at an animal, there's a button prompt that pops up on the bottom right of the screen: "Show Info" do that and it'll tell you exactly what to use.

Basically the small game arrows are for very small things; stuff you usually just stuff right into your pocket when you pick them up. Like crabs, squirrels, tiny birds, etc.
Vamrint is used for small animals that hang off of the side of your saddle.
Rifle is used for anything larger. That's kind of the quick-guide.

#horses is a great place to ask for specifics, but basically all you really need for any horse is good stirrups. you can even use the Nacogdoches saddle too. these make your horse use less stamina when running so you can sprint for longer/forever.
