You can't buy anything if you're underlevelled though, that's the whole point of the levels

You can pay things with gold, but it's not a shortcut to levels unless it's changed

Saddle has stat, it will buff your horse cores, stamina drain, etc. Same for stirrup.

Normal saddlebag can store 3 outfits, big saddlebag 5 outfits, collector saddlebag 7 outfits.

Yup, clothes aren't just cosmetic too, you can mess around but remember that some outfits are needed for a certain type of weather, but as long as you don't go into snowy areas a lot you're fine

I actually been trying to sort out an outfit for both tbh

Just make 2 set of outfits: 1 hot and 1 cold.
Cold outfit for temperature below 23°C, hot for temperature above 0°C.
For simplification: when below 1°C switch to cold else wear hot outfit.

But if you like your cold outfit then switch to hot when above 23°C, else wear cold outfit.

You will also see inside your core there's symbol of 🔆 when it's too hot but you wear average or cold outfit,
❄️ when it's too cold but you wear average or hot outfit.
