Im doing 5 o levels and ill do 3 alevels. ill try to get a good SAT score and maybe some extra stuff from participating in school competitions and whatnot. Is this enough to get into a good university? Im targetting KFUPM in saudi arabia but if not that then idrk maybe somewhere in europe or the UK or something, because theyre not that into extracurriculars as compared to like the US. I havent really searched on them much yet. But i see people doing way more o level subjects than I am, so should I do more aswell or maybe take on another A level? i wanna do something related to cs and its either gonna be cyber sec or an AI engineer. iill prolly take Maths, cs, physics in a level.

In general the minimum igcse subjects for universities are 5/6 so no need to take more than 5, though if you feel like you can handle more then go for it. And yeah that is generally good enough to get into a good university because having work experience gives you a huge edge/advantage over people who don't have it.
If you are worried about your igcse subejcts not being enough then my advice is you go to multiple university websites and seeing their minimum igcse subject requirements. In general countries like the UK require way more than 5 subjects but on average 5/6 is the minimum / average. And your a level subjects are fine for the things you are interested in, if you really want an extra subject you can add further math .
(Before you enter your a levels its worth considering which board you should take because they are advantages and disadvantages of each board. The reason i say this is because one board it maybe easier for you to score marks/grades in while another board maybe harder. If you are having trouble deciding this then ask in the "as-al chat").

9-10 is a lot, but if u can handle it then the more the merrier, just try to align ur subjects to what your trying to get into

for medicine i dont really recommend environmental, wont come in as useful, unless you really want the extra subject. it will probably be much easier
btw maths core will only get you upto a C, it will annoy u later on
best to do extended, tho it will take much more time, it will be much more useful
