Normally butterflies are yellow/white. When they'd voluntarily give you their light they'll stay yellow-white [like when you honk to recharge other players]
You'll notice the butterflies spin around temporarily and leave you (they recharge you slowly too).
When you hold the butterfly, you force it to give more than what it can give hence it turns pink (you're basically draining its lifeforce) and it can't escape until you release it. The butterfly in this case will recharge you really fast compared to normal.
