The key your instrument plays in will vary depending on the key of the background music at the time
This will generally be determined by your location, but you'll find that your key will change as the BGM's key changes too
Practically speaking, you can access a particular key by going to its respective location and waiting until the background music ends

If you want to play songs from the in-game sheet music, it works similar to a rhythm game, with BGM playing accompaniment to your kid on an instrument. If you want to play your own songs, try just tapping out notes and discovering what works. It's pretty easy to work out chords because of how visual the layout is. If there's a particular song you like, other people may have posted videos or song charts for it in this channel if you do an in-channel search

Each instrument has its own part so it’s meant to be played with friends! Together (if everyone does it well 
) it should create beautiful music

Yes - nearby players with instruments will see a notice when you're playing a music sheet which if tapped gives them the ability to play along with the same sheet. Some instruments - pianos, flute, harp - have the melody part but there are others like percussion and bass
Today I learned that SkyScores counts as a music app and will activate the in-game headphones
Considering I had no music on my pad and have no intention of paying for Apple's music services, this is highly beneficial

Here's the process I use to transcribe music into Sky. You'll need some basic knowledge of music symbols beforehand.

Search both this channel and Youtube for the song in Sky, to make sure it doesn't already exist.
-
Remember the 15-note range of Sky instruments; if the song takes up more than this, you may not be able to transcribe it.
Home is in the C-major scale, meaning the center, first, and last keys are C. This means instruments in Home can go from two notes under the bottom line in treble clef to four notes about the top line. (This varies a little with different keys and with some instruments, but it always spans 2 octaves.)
Also check for sharp and flat symbols on the notes. These also can't be played in Sky. You may be able to substitute a natural note for these, but it may change the sound if the note is a prominent part of the tune.
- Check what key the song is in. There may be one or several sharp or flat symbols at the beginning, next to the clef (if there are none, the song is in C major.) Count them and check what key the song is in. (look up "key with 2 sharps" or whatever is there, it should tell you.)
Then, use the Sky Music Guide to find a location in Sky that matches that key:

- Go to the location that matches your key. The center, first, and last keys are now whatever note is in the key's name (F for F major, and so on.) The notes in between go ABCDEFG, starting with your note from the key and starting over with A after every G. So the note letters in F major are:

Use these letters to tell where the notes from the sheet music belong on the grid.
On treble clef, there are five lines and four spaces. Starting from the bottom, the lines are E, G, B, D, F. Starting from the bottom, the spaces are F, A, C, E.
Continue the pattern to find notes above or below the lines.
Check if the first notes sound right.
- Play the notes of the song. I recommend listening to the song on video first, so you can hear the tempo and how the notes should sound.
Once you've got it sounding right, write it down in Sky notation. You can play it in any location with the same keys, although this will change the key.

Bear in mind also that, if you're running iOS, having a music app running in the background will cause your skykid to wear the cosmetic headphones. Simultaneously this prevents the background music from playing and, therefore, your key won't change.

Hey, I have a question for those who make complex song arrangements in Sky:
How do you translate the piece from it’s original composition to the notes in Sky? If there is a piece you would like to be arranged in Sky but does not fit so easily with the nature of it’s layout (e.g. a song with many chord changes that shift from major to minor), what do you do to overcome this challenge? All in all, how do you break it down?
And most importantly, where would be a good place to start in this?

@cobalt lagoon Ok, I will try my best to answer as I’m not an expert. I’m more of a casual.
My solution is to change the song enough that it fits the notes in sky but is also recognizable.
Mainly by trying different chords that sound higher or lower.
I try not to add too many things because at one point the song loses it’s main elements and becomes difficult to recognize.
I add the things that catches my ears when I listen to it and not the background notes that are more like a complement rather than the main focus.
Yes, it may not sound the same or as good than the original but it has the same “essence”.

@cobalt lagoon ooh, that's a tough price to transpose. I'm no pianist and I barely have any training in music theory, but I'll try my best. I also play by ear btw so this might be different if you have a score for reference.
How I'd approach it is by learning the main melody first by ear (or if you could find a music sheet, that'll be even better!). I'll see how I'll have to adjust octaves and stuff since Sky is only limited to two.
Then I'll work out the bass line. Just keep it as simple as possible and ignore chords. This is not only so you can practise the main melody and the bass first, but also because the bass might overlap with the main melody's notes (cuz only 2 octaves are available).
From there, I'll squeeze chords where possible/where it makes sense. I usually limit it to only two notes (because I'm not great with chords). You might also need to find alternate chords to use since you only have the fundamental notes of a scale to work with.

@dawn haven I’m not a dev, and if you want a more official answer that would be a question to ask if they have any kind of Q&A in the future. But if I had to guess—it would probably be a LOT of work to add that into the game between adding sounds back in to the other instruments, having multiple versions of each song sheets, programming and engineering, figuring out a layout that works on everyone’s screens (especially phones), and probably other stuff I’m overlooking.
But that still doesn’t address the reasons the devs gave for the more simple setup in the first place: Making music more accessible to everyone regardless of skill level. If a new player saw someone playing something quite difficult and complex, they would easily get the idea that music is too hard and best left for the pros, and give up before they started

They likely wont ever let you change keys yourself since theyre done to match the bgm to avoid dissonance

@hollow vortex No, no places tuned to a minor key, but you can play in a minor scale if you use the B1 button of the keyboard as the base of your scale/the "do" of do-re-mi.
