I must say the crabs in the caves are the most numerous, mean and aggressive we have seen in the game yet! It seems there is no way to knock them over, you just have to hop quickly or fly through. Has anyone found a way to knock them over?

Right now they have no plans to repeat seasons, that's why the traveling spirits feature exists. Ultimate gifts may be brought back some other way in the future, but they have not announced exactly when or how they would do that so far

The traveling spirits are just all of the spirits from past seasons. They bring back a random one every time, and you can purchase the items from it that that particular spirit gave out during its season. If you already have the items from that spirit because you got them when the season was around, then you'll only be able to purchase a heart and a wing buff from it. But if you didn't get the items during the season or during a previous time that traveler came, you will be able to purchase the items from it
And you don't need to have purchased the adventure pass for the season to be able to get the items when the spirits come back as travelers

The spirit is the first one you run into after the broken temple area- the one right by that first krill that eats the manta
so it's all pretty easy other than facing the krill, but that one's not too bad if you do it in that same area- just stand right outside that triangular shelter thingy by where the spirit is and dash in there once you're spotted

Sorry for the pings @random bramble and @limpid merlin but I saw your bug reports and wanted to let you know that the heart from the quest giver is a regular heart. The seasonal hearts have a different design and are available at the top of each seasonal spirit's tree.
