Now we kinda only have gameplay and such. Cool, but doesn't really bring out the "best" in the twins.

I don't think it's appropriate to consider it "data". It's not fundamentally part of her architecture, per se. I think you're overconflating "LLMs" with the GPT models you see on the market.
For the most part, once the model has been "trained," it can have something of a "dynamic" architecture from that point forward. There are simply aspects of her memories and context which are changing and adapting over time. Whether or not he ever does anything to tweak the underlying layering and networks is info I'm not privy to, but the streams themselves are important to their development in the same way going outside and having conversations is important for humans to grow.

For Evil, at least, he mentioned that he assumed her stuttering was partially linked to her being in Discord calls, so it's very possible he just stopped leaving them in calls for chill streams.
