Hmm is it helpful to start with the commander and the deck archetype first? E.g, legendary matters deck (plainswalkers?) helmed by [[Esika god of the tree]] for access to the 5c when deck building?

I think esika is more generic and can help with mana. [[Jodah the unifier]] might be hard to cast with budget 5c lands for a legendary beatdown archetype

goats: clackbridge troll, woe strider??; id honestly stretch the definition a bit and include like, bridled bighorn or enduring innocence
oxen: fortune (the mount creature), bonny pall
pig: ilharg, yasharn
snake: koma (technically a serpent), ophiomancer, hapatra
rooster: honestly no idea how i'd find a chicken under the enormous bird subtype
rabbit: tons of options in bloomburrow
horse: shadowfax, calamity
rats: also tons of options
monke: kibo is the only remotely inexpensive and still useful choice (and still $2), otherwise rashmi & ragavan teamup
dragon: again loads and loads of options at various power levels
