essentially bringing ur steak up to around 120 F internal (need a meat thermometer)

then sear the sides with a ripping pan (tallow), 1-2 mins each side and then let it rest for 5-10 mins

its called a reverse sear cause ur kicking the inside first then searing the outside last

forward sear would be searing first, then putting it in the oven to finish it off

120 is the sweet spot to pull it off the heat caise residual heat will keep cooking the meat as it rests, around 10-15 F. butter basting only keeps the meat warmer while resting, it doesn't change anything else really
