Sagi birds when killed become a cargo item. You take that cargo item to a leatherworking station and, for lack of a better/correct term, you break down the sagi bird cargo into a pelt, some meat, bones and I think one rare item has a chance to drop. Then you can use the pelt at the leatherworking station and clean the pelt. Then, once you have that, take a bucket of water and a tree bark to the leatherworking station to make tannin. With the cleaned pelt and tannin, you can take them to a tanning tub to make the precursor to leather, I forget what it's called in-game. Then you take that back to the leatherworking station and make rough leather with it (IIRC, converting from the item from the tanning tub to leather requires no additional materials)

3 Make bird products
4 Clean pelt to clean hide
5 Tan hide in tanning bowl with tannin, Another product made at the leatherworking station
6 Make rough leather at leatherworking station
