Fabric mod loading improvements

Add an option to deactivate Sodium and Iris on one or multiple versions. This would allow for the usage of other performance mods like Canvas Renderer and VulkanMod. These mods are most likely incompatible so compatibility would have to be added. This would improve performance on some devices.

I forgot to mention that you could also use OptiFine with OptiFabric then. If someone needs that.
