It literally is possible I’ve seen a guy convert the pack and it retextured netherite items

If you just want to convert existing textures then that's fairly easy, however generating new textures for new items suddenly makes this a lot harder and not worth the effort.

Pretty nice idea, lots of things break between versions, allow updating your pack to a newer version without creating new textures, for example, moving and renaming certain textures, pack format updating, etc.
