Item text colors are based on rarity.

Common (white): Applies to most items.
Uncommon (yellow): Applies to some treasure items like Elytra, Totems etc.
Rare (blue): Mainly boss drops & other rare items like Golden Apple, Conduit & enchanted armor
Epic (purple): Difficult to obtain items/OP items like Barrier, Dragon Egg, command blocks.

Which means that if you wanted to change the text, there might be a texture pack for that though it's intentionally like that and not colored for each item.
