I was testing out my wiring and plugged in my battery when my esc got lowkey pretty damn hot then i realized i didn’t plug them into the pix am i cooked? Also can someone check the rest of my wiring

the solder job looks really bad. you need to practice that
but nothing looks out of order. maby have the motors connected.
and remove the red wire from the servo plugs. those are from the BEC, supplying 5V back to the FC and they might be fighting each other

You generally dont want to do any electronics without even the most basic multimeter. They're super cheap and even I, someone who's pretty experienced at soldering, use them to tripple check my work
That being said, I don't see any obvious shorts. But do keep in mind that most modern PCBs will use a ground plane, aka any space that's not used up by traces will generally be grounded, so you may have to watch out for shorts with that

yes. those 3 plugs. when you look on the side of the connector you'll see tiny plastic tabs holding down the metal connectors inside. you can lift those tabs and then pull on the wire.
fold them back and put electrical tape around them or just cut them off if you're not planing to have servos
