I still need props and I'm debating whether I should buy an ELRS ceramic chip antenna receiver or just go with the T antenna one. What's your opinion on my shopping list? Any prop recommendation? Anything else you would add to the list? I want to make 100% sure I didn't do a major fuck up before pulling the trigger, it's a fair amount of money to me!

I've had bad experience with Readytosky, using a 3" + 6" + 7" quad. Not gonna buy from them again. It could have been the design, idk. If you insist on them, check at least that every little detail, every little screw, is exactly as in the TBS source one. My 6" and @radiant pebble's 7" "Mark 4" have terrible vibration performance, and their 3", after its first real flight (not just hover test) has to be tuned to fly without noticeable vibrations, which (as far as I'm concerned) is pretty sad for a quad as small as 3".
And I can recommend the JHEMCU stuff. They have pretty decent stuff for little money. E.g. F722 up to 6S for less than 35€, 55A 6S 4in1 ESC for less than 30€. 1.6W VTX for 17€. First tests of their hardware have proven successful. Speedybee is a bit more "proven" though, if you don't want to experiment with lesser known manufacturers.
And yes, going 6S nowadays is better.
Usually larger cams have better performance, I'd suggest one with 19mm, if there's no specific for this one. And for me personally, I prefer a dedicated DC charger with a random PC power supply over the 608AC. Once you grow a larger fleet, those 80W (I guess) start limiting your charging speed. I like the ISDT Q6 nano. If that's too expensive, maybe you can find some used. Usually the larger Q8 go for 40-50€ used here in Germany
JHEMCU stuff is ⁵⁰/₅₀ between a decent budget product, and a waste of FR4 board

I wouldn't recommend Jhemcu. I've had 3 AIO, and while I got lucky, they all work, they all have issues. The one that is suppose to have a black box never would record. the power I get from the 9v and 5v pads is so dirty I can't run an Analog VTX or GPS on them, and the boards themself put out enough RF noise to mess with other nearby devices. But they all fly amazing, so they were worth the $9 each sale price I got them for.
I suspect you may want a different camera. While it might be possible that someone invented an all new optical chip that can get 2000TVL, I doubt they would be selling it for $17. That's as unlikely as X-Ray vision glasses. Also not a real HDR and a Starlight at that price.
Pick a good camera from one of the 3 major brands that have been pouring money into research for these camera for the last decade or so, and you'll likely get a much better image.

Attention span as short as mine
This is weird, I'm driving my 800mW VTX with no problem from my (less than 20€) F4 (10V rail), + a Runcam split 4 nano (4k sd recording) from the 5V rail.
No problem with that yet. And before I went ExpressLRS on that quad, I also ran a Flysky receiver off the 3.3V rail at the same time (it had a broken regulator, so I needed direct 3.3V). Now with ExpressLRS on the same 5V rail as the split, still not problem
I just read up what TVL actually is (TV lines, horizontal resolution). Holy cow, that's some stupid BS...
Analog isn't even that sharp, it doesn't make sense to go over 720tvl
I have a 1s jhemcu aio that seems fine, a 6s aio that is very confused and not particularly flyable. So it's a mixed bag. I like skystars as a more reliable budget option.

I decided to leave the camera because I've seen some comparisons and it seems to be good enough even if it's false advertising, I also changed the ERLS module because the old one was not good for my radio (it was small sized, my slot is standard)

Have you thought about buying used? Surely you have some platforms for that, even if it is Facebook marketplace
Here in Germany, similar quads can usually be found for around 100-150€, which is somewhere between a free vtx + cam and a free vtx + cam + stack. And those deals mostly include many props and usually also batteries and/or a charger (personally, for only the quad, without props and accessories, I wouldn't pay 150 used, but with all this, I would definitely consider it)
E.g. for 200€ I recently got a 5" drone, analog, with onboard DVR, some props, 3 batteries, a 2 channel charger, an external monitor, a TBS Tango 1 (+ XF Micro TX V1), some additional antennas, spare motors, partially damaged spare ESC, spare cam (untested, but I assume it works)
And for the stuff I don't need (Crossfire + tango), I can just sell it
