Ok, Before checking to see if there is a problem, have you tried summoning golems with spawn eggs, /summon, or building it with iron and a pumpkin?

Your barter component is within the component group that is applied when the golem belongs to the player, that condition should be activated by building it with blocks, but with /summon or spawn egg I think not.

Oh no Sorry, it's in the village defender group so it should work on naturally generated golems.

I recommend you move that component to the general
