How would I customize guis

I’m very new to scripting and I’ve been trying to learn how to customize JSON guis. I want my UI to be customizable and looks something possibly similar to this: anything I can play around with to make it look at all different. Any help is greatly appreciated— even Minecraft wiki pages…
