Have a look at the wolf files in vanilla assets. If you use minecraft:variant on the entity file you can then alter the render controller based on variant. Use the spawn filters to adjust which one spawns based on biome.

when i do that my mob is invisible, i only get the shadow
and enitity wizard didnt give me the render controller
