We have the minecraft:ore_feature to support custom ore veins, are there missing features there that would help you achieve the result you are looking for?
ore features cannot do what we are getting at here
Those are only for small ore clusters. Not the super-clusters used by giant iron and copper ores, which are also very much multi-chunk.
we're talking about the large ore veins, that have a stone and raw ore block included, i do believe this is on java edition but not bedrock
I'm now wondering how they did that. Aren't those more than 3x3 chunks in size?

They’re a different kind of system, like jigsaws or aquifers.
You can technically use advanced noise techniques to recreate them with features.
that requires the all-dreaded 3D noise
