I know I can use minecraft:enchantable to add a "set" of available enchants to an item. but in the case where i want to add specific enchants to an item is there a way to do that or do I need to find an item that best suits? for example, i would like to add "mending and unbreaking" only, but that doesnt seem to be an option.

Yeah you cant define your own set, best to choose the one closest to your fit. Try carrot on a stick or flint and steel(i have to double check if those actually exist or im misremebering)
is there some table that has a list or each slot and type?
I was correct! those do exist!

ive contributed before i dunno why it isnt doing it for me now, but i also dont have time to diagnose the issue :P
i pretty much just went through and pulled and organised the data from the main minecraft wiki. whether the enchants actually do anything or work is another story
oh it also didnt include some of the slots you listed here, carrot stick and spear
