Here's a documentation on attachables, the second option talks about animations and animating the item correctly in the player hand.

Use animation tab on blockbench, make new animation, then change some button that has "entity" name to 1st person view, then adjust the position. For it to animated you need animation_controllers, add your animation with molang "q.is_first_person" <= this moLang, try check the wiki (I haven't touch this thing for long time)
blockbench doesnt even make them right as ive created an item using a 64x64 texture and the game will not load it at all. No documentation anywhere seems to help at all when it comes to trying to make items with larger or 3d textures. which is complicated more when people actually figure it out but dont care to share their results to help others who struggled like them
Both Blockbench and the bedrock dev wiki have been absolutely useless in this regards
render_offset should not have been removed at all as a component for items.
they simply made it more complicated for no reason
10hrs later and still cannot find a usable format combination between High Res Items and Attachment sections on the Wiki
