I'm rly new to the whole bedrock modding Community and I don't get why some addons that are listed as 1.20.12 on Mcpedl work and some don't, can any1 explain?

Addons break because they are using experimental features. And since they are experimental Mojang can and does change or remove them which results in addons breaking. If you don't want your addons to break stick to stable features and regarding a lot of addons breaking recently Minecraft 1.20.30 made a lot of changes to experimental features which broke some stuff

No, not really. There's still plenty of features behind experimental toggles which means that an experimental addon breaking update could happen again in the future

Some of these addons that don't work you can fix just by changing the min_engine_version of manifest.json to 1.20.40
