I think it's a matter of the angle, it seems that the ears are a flat by the angle of the camera just is not seen, but if you zoom you can see a couple of pixels of what seems to be the ear

It's a matter of the angle. It's just positioned so well the ear is super hard to see.

Also I don't think this gets the point that as MCLive suggests, the armadillo when it was curled up was the size of any normal block (planks, grass blocks, dirt, etc...), so it's body has to be just a teeny bit thinner than that point so that armadillo is too small
