I tried replacing the 2 block loot table and it just didn't work at all, it seemed to be ok, is there something I did wrong?

you have to copy the exact folder structure

the folder structure looks like this:

loot_tables/blocks/grass.json
and
loot_tables/blocks/tallgrass.json
