If I'm not mistaken, the seek village behavior only makes them enter a village, or look for one and then enter it. Basically all you made is a villager that will start looking for a village at night.
Try looking at the vanilla bee behaviors, it has a component where it seeks shelter, maybe you can get those codes and tweak them.
