Maybe Change the textures
the texture is pretty basic and the animation feels pretty stiff. great tip is to offset some animation keyframes to add some "bounce"
in general, this "bounce" is the beginning of the animation, like it is preparing to shoot. Regarding the texture - what should I add/remove from it? I had the same situation with the cannon of the pillagers, I did not regret that I sent it to the showcase.

keyframes "bounce" in the animation is already there. I use it for the shot. In principle, I can throw off a link to a catapult model so that you can redo it the way you want. I will leave your authorship in the list of authors
I think adding a minor bounce just before the catapult reaches the top, shaking the whole device, and rolling it a bit forward/backwards would look great instead
As for the texture, what you did with the cannon is already a good step - add some more details and variation to the texture, a bit of "noise" to break up the pattern. I guess the rope could be darker as well.
The wheels is what i am really unsure of, for both models, as they look unusual to me, maybe modeling them out of cubes would work better?
hmm, it's physical. repulsion to where the bucket itself pulls, because it experiences a speed that pulls the catapult itself
about the wheels: I do not quite understand what you mean. I first made a huge cube 1 cube wide, 8x8 high and long. Since there was free space, I filled it with small cubes, as it looks much prettier.
if you mean to make the wheels square, then it would look ugly and unphysical, because before that the cannon had square wheels

Are you attempting to be more cartoonish with the animation or more realistic?
When the catapult arm is being pulled back, it should move much slower as it is building up tension. And when the catapult launches, the arc of the arm should launch extend all the way forward - that's how much tension had been built up. Though this is only if you're trying to be realistic
