If it's not attached to a block yeah
I think you should use the boats runtime identifier as it would scale with the hitbox you set and isn't bound to the block grid
But for a hitbox matching your planes model you would need multiple entities either riding a different part of the plane or constantly tping to it
The only downside I can think of right now is that you cant change its hp
But I do think you can just make it invulnerable to whatever damage sources you like
