I have 300 heavy horsed cavalries and 200 longbows while my enemy has a thousand in total of random soldiers

High quality troops can fend off more poorly trained troops for ages and ages if you force the enemy to only be able to commit a small amount of its total force at a time

Genuinely just have your Calvary run around while yoru archers shoot

You can also outmaneuver very large armies

Be on a constant offense against them and just be faster
