Sounds like the "Hands Busy" bug - if it locked you up and you weren't able to switch weapons, reload, check chamber, etc. - It's probably that bug. There's no fix for it atm, except restarting and reconnecting

I just died of "Exhaustion". When I fell over dead, I had 144 hp remaining with a blacked stomach (and other limbs). The energy / hydration read 0 0 and I started the fight that blacked my stomach at 10 10

so I killed the guy, and in the time it took me to get half way done looting him for food I died. I'm surprised I died this quickly, which means I don't understand the mechanic
