1- You're still new, nerves come with time and experience..
2- The stakes in this game are pretty high, relative to most FPS games. You risk losing gear that you might not know how to replace, everything you have you could lose, and you actually run out of everything, which is pretty frightening at first.
3 - EFT is really intense and drawn out, combat makes up like 3% of your time in game, if that. So when it does happen, it's hard not to panic.

Just keep playing, everyone feels that way at the start and it goes away with time. Play offline and get totally comfortable there, then online you can start to go out of your way to look for combat with cheap gear that you know you can replace.
