Eh, if you get the jump on someone you can usually take them down with worse ammo. And most people don't use visors so headshots will kill with basically any gun

Headset is whatever your preference is... use them all, see which one works best for you
Helmet is a weird one because most any kind of GOOD ammo will pen through any regular helmet in 1 hit.. killing you instantly. Heavy helmets (tier 5 or 6) tend to penalize you in movement or vision - so I'd recommend that if you are playing a distance game: no helmet. If you are going to go PvP in close quarters: wear an Alytn. If you want to just have an all around good helmet: ACHHC or ULACH ..... these are all just up to your play style though
Armor you want to use level 4 at a minimum. If you don't have 4+.. you might as well wear nothing. UNLESS you're purely looking to fight scavs, maybe a 2 or 3 will help against a shotgun scav. Just kinda depends on what you're trying to do. Any PMC will be running ammo that will wreck you if you're not wearing at least level 4.
Weapons tough... that comes down to what you are comfortable using, if you want to snipe or barrel stuff someone... feel free to DM me if you want more better options - its a long conversation.
Ammo is something that you need to learn on the ballistics page - only use ammo that can penetrate into level 4 armor, you want it to ideally do damage through level 6... but it needs to deliver a punch to level 4 at a minimum .. as most players are using level 4 armor regularly.
