Disable automatic server selection in the launcher then open the manual server selection and pick the server with the lowest latency. And only select one server.

Quick advice is to do scav runs for the random gear you spawn with + gear you find in raid. Keep in mind that as a player scav, other scavs will not attack you unless you attack them. There's still normal players (PMCs) that might still be in the game though... but as a scav, you tend to load in way later to a match than they do, so some of them will have died or extracted by that point...

Also check out some of the beginner videos that content creators like Pestily have. You'll also want to pull up a map of the place you'll be going to, so you know where to extract...
