The few that I find everybody likes are:
Changing lean to Press instead of Continuous, as moving while holding a lean is a bit awkward.
Changing 'Check Ammo' to something other than Alt-T. Commonly people will have that on their mouse, or H, V, U.
Changing 'Check Time and Exits' to Press, instead of double-click. It will unbind 'Check Time', but you'll never miss it.
Either unbinding or rebinding the emergency reload key, for obvious reasons, it's rarely useful and having it bound to the same key slows down your default reload.
Changing your fix malfunction keybinds to something easier to remember than "L" for inspecting and "Shift T" for clearing. Many people use Press "L" to inspect and Release or Double-Tap "L" to fix the malfunction. Up to you, but make it simpler than it is by default.
Changing 'Discard' to something more ergonomic. Common ones are "LCtrl+Right Click", a mouse button, "H", or "U" but just make sure you know what it is, as you'll use it often.

For gun jamming you can bind inspect weapon on press of a key and check chamber/fix malfunction on release. If you hold the button down it will then inspect to find the fault then you can release the key and it will fix it

so here is a screenshot of my key rebinds. ive set "inspect current weapon" to L - Press and "check chamber/fix malfunction" to L - Release. Basically what you do is hold L until the animation finishes and youll then auto clear the breach when you release L.
its super easy once you do this rebind, one key press for like 2-3 seconds and its done
and basically scav guns tend to jam cuz you spawn as a random person with random gear and random durability on your guns
in random and active matches
i've also unbound detach mag becasue i find alt + r is too close to alt + t lol (which checks mag)

apparently if you unbind emergency reload from double tap r, the game won't wait to see if you pressed r again to reload once (with a single press or whatever)
and youll reload some amount of time faster (double click timeout which is 0.3 or 300 ms)

for instance i have 9 and 0 both set to g, but to press and double click respectively
so that if you have a grenade in those slots, you can put a frag and a flash for quick select in battle with a single key stroke difference
g already prepares a random nade, but its on release, so if you dont have nades set up, itll just give you a rando grenade instead
