When I needed space I would just take 5 mins looking up every item to remind myself what to keep and what to sell. It also helps you learn how to loot better since you learn the value of items.

For example a lot of those items you will need for hideout upgrades, but some of those hideout upgrades wont come until much much later on so you might choose to just sell them when you get the flea market. Because, for example, I'm not saving items needed for things like the Bitcoin Farm because its going to be aaaaaages before I unlock it, if I even do.

You only sell hideout items if you desperately need the money that bad or you desperately need the space that bad.
Or if its materials for a very late game hideout module that you wont unlock until several months from now

Like solar panels, scav case, bitcoin farm, and level 3 modules can all have their shit sold because its gonna be a long while before you get there. And by then the prices on the flea for those items will drop
