To start with the basics - let's say we have a simple PHP website with a login form and it's vulnerable to SQL injection attacks

The logic behind it would look more or less like this

# some code handling data...
$sql = "SELECT `username`, `password` FROM `users` WHERE `username` = '";
mysqli->query("$sql $username'");

# some code handling login...

Typically user inputs a regular username, so database sees a query like

SELECT `username`, `password` FROM `users` WHERE `username` = 'wizarddos'

But, this code doesn't have any validation - so we can input everything there

In case we insert a specific SQL instruction, database might understand our username not as a username, but SQL code

So, if we put there eg. ' OR 1=1 -- , SQL would see

SELECT `username`, `password` FROM `users` WHERE `username` = '' OR 1=1 -- '

You see? It doesn't have anything inside the username check, but since we used OR, expression username = '' OR 1=1 will always be true and it'll return us all the values from the database

Those 2 dashes in the end comment anything behind, so SQL doesn't return an error about unclosed quotes

And that's more or less how basic SQL injection works
