It all depends on how you search for things on Google. It's a powerful tool, but in cyber it's being used in a specific way, to find what you're looking for much better and with less effort. Learn about OSINT, it will help you.

Even if there are many encryption methods in place, theoretically, there's always a way to bypass one or another of them. I don't have a definite answer to that sadly. But things such as Proxies, VPNs, encryption protocols do help of course. But there's always a vulnerability hidden to the eye, that can be expolited (0-day).

TLS only encrypts it in transmission providing the other mail server supports TLS. In theory Google could decrypt the data stored on your account if they have a law enforcement request or evidence you've been engaging in abuse of their services (Spam etc)
