however, to answer your question, I'm gonna use part of the MITRE ATT&CK Framework and base my notes off of that (basically order my notes and add them where I think needs to be added). note that this is for offensive security (red teaming/pentesting), not defensive security (blue teaming, SOC)
Here is one tip I give for notes on reddit:
Make sure to write notes. Good notes are:
#1: Not too long but not too short
#2: Organized in a way you can quickly find the stuff you need
#3. Useable for the future
#4: Based on the techniques, tactics, procedures, and tools you learned
