That depends on your definition. I would not be hiring a junior pentester if they can't sit down and take out your typical easy HTB challenge (or equivalent) -- preferably medium HTB challenge.

Dunno about other orgs, but that's how our technical competency challenge works. It's got components from across the spectrum of levels, and we gauge an applicant's skill by how much they manage.

That's not really how it works.
Again, I don't really care if an applicant actually does HTB, etc (although it's generally plus points to their application).
I (personally) care about their technical ability. The raw technical skill level I'm looking for is roughly equivalent to that which you would need to get through your typical HTB Medium / higher end easy challenge, for a junior role.

It's a lot more complicated than that though. For example, if your only experience is CTFs and you can't differentiate between those and an actual pentest then it's a huge red flag. Similarly if you're able to take out a tonne of insane level HTB AD challenges but can't reliably test a simple web app, you're not getting hired (not for a general pentest role anyway).
It's a reasonable benchmark for technical ability, but that's about it.

download the virtualbox format of kali, super easy install. literally one-click installation besides uncompressing the file.

I have a MacBook and Kali works just fine on vbox. Did you download the right .iso file?

When I was downloading Kali I made the goofy mistake of choosing the wrong version

Only issues i faced is that apple sillicon doesn't pair well with docker images. You either have to force the platform and emulate or just get a VM
