Lots of patience, and what I tend to do is follow a recipe for Vietnamese Pho, but instead of using Beef bones, I buy a whole chicken and use the left over bones. Then a lot of spices (star anis, cardamon, cinnamon, etc..), onions, garlic,ginger.
