for nyx-proxy I use that with Burp Suite on the local computer to serve as a SOCKS proxy and then FoxyProxy in Firefox to actually view it, with the bonus of everything being feed through Burp Suite

You don't need a full server like I have to start with homelab stuff. You can realistically start with any old computers you have, especially with Proxmox. If you get better tech after that, put it in your Proxmox cluster and migrate them
