So there is a difference between cheaters and hackers going after customer data right? So if your goal is to prevent cheating or be involved in that industry it will be a separate set of skills and a separate path mainly focused on software, coding, and reverse engineering in the context of games and anti cheat. If instead you’re concerned about say a vendors website or account management for a game you’re looking at web vulnerabilities, cloud and infrastructure etc.

I mean you can make your Ubuntu experience as custom as your Arch experience. But, from my own experience, I find that whenever I use a distribution such as Arch where everything doesn't come as prepackaged as let's say Ubuntu is - I get a better experience out of it and it's way more customized to my liking as I only install the things I really need. There's no judgement on my end which distro you use, I've been distro-hopping for years - whatever fits your needs really. My reason for switching over to Arch now is to get on a rolling release. I was using void for years before that and I thoroughly enjoyed it.

There are downsides to using a rolling distro, you can run into issues because dependencies break as packages are frequently updated. Personally I haven't had an issue with it.
