My company owns other smaller companies. I won’t give away who they are but they are big and I’m over their global cyber security. Nah, I always rinse the peeled and chopped potatoes in cold water and salt to remove some of the starch, repeat that, then use hot water for a third and keep them in there until vegetable/sunflower oil or goose fat has preheated in a tray in the oven. Optionally, put the potatoes in the microwave until just under fork soft and toss to fluff up. Then drain the potatoes, toss in a mix of sesame oil, garlic pepper, cracked black pepper, onion salt, salt, rosemary and thyme and throw into the oven on ~200-220 until golden-dark brown on one side and flip
